Pea and spinach pasta
A quick pasta dinner with peas, spinach and a lemon cream-cheese sauce. A little pasta water helps bring the sauce together.
Ingredients
- 180 g dry pasta
- 150 g frozen peas
- 100 g spinach, washed
- 80 g plain cream cheese
- Half a lemon, juice
- Black pepper, to taste
Allergens: Contains wheat (gluten) and milk. Pasta may contain egg; check the packet.
Method
- Cook the pasta in boiling water according to the packet instructions. Add the frozen peas for the final 3 minutes, or the cooking time specified on their packet.
- Reserve a mug of cooking water, then drain the pasta and peas. Return them to the pan over a low heat.
- Stir in the spinach, cream cheese and a splash of reserved water. Cook gently, stirring, until the spinach wilts and everything is hot. Add more water if needed, then finish with lemon juice and black pepper.
